Soup with Lentils in Italy

Italians celebrate the new year by getting together to eat lenticchie with friends and family.

Italian Lentil Soup varies from home to home, as do most family recipes, but pork is a common ingredient in many traditional recipes.

But my take on this aromatic, hearty Italian lentil soup is vegetarian (though it could easily be made vegan). Be at ease! It still has a lot of tradition and flavor.

Wholesome lentils are a welcome change from holiday cookies, baklava, and sangrias, even though I can’t speak to fortune.

I need this kind of reset, and this gluten-free soup fits the bill!

This soup recipe has so much umami-rich parmesan cheese, rich crushed tomatoes, and a fragrant blend of Italian seasonings that you might not even realize it’s entirely vegetarian.

=Regardless of their color—brown, green, red, or black—lentils are a fantastic source of plant-based protein and are also high in fiber, iron, folate, and zinc.

For soups like this Italian lentil soup recipe, where you want to preserve the lentil’s velvety yet toothsome texture, brown or green lentils work best.
